The kilometre zero of specialty coffee in Madrid
Guides, culture and services to understand specialty coffee, enjoy it in Madrid and turn it into your project.
Eight neighbourhoods, one starting point.
Every cup starts long before it reaches Madrid.
On a farm, thousands of kilometres away. We tell you the whole journey and help you travel it.
What it is
Specialty coffee in three keys
Scroll down slowly: each key changes what you see.
-
01 · Score
80 points or more in cupping
Trained tasters score each coffee out of 100 with a common protocol. From 80, it is specialty.
-
02 · Origin
You know where it comes from
Country, region, farm, altitude, variety and process. The more specific, the better the traceability.
-
03 · Roast
A roast that respects the bean
It is roasted to show its own flavour, not to hide it. Nothing to do with torrefacto, which has sugar.
From farm to cup
Eight stops on one line. This is how coffee travels before it reaches your table.
- 01
Farm
Coffee grown at altitude, on farms with their own names.
- 02
Harvest
Only ripe cherries are picked, often by hand.
- 03
Process
Washed, honey or natural: the method shapes the flavour.
- 04
Green coffee
The beans travel in sacks and are cupped before buying.
- 05
Roast
A tailored profile for each origin, in small batches.
- 06
Grind
Just before brewing, adjusted to each method.
- 07
Extraction
Recipe, ratio and time: espresso, V60, Chemex or AeroPress.
- 08
Cup
Aroma, acidity, sweetness and body. End of the journey.

Questions
Frequently asked questions
What people ask us most about specialty coffee.
Another question? Write to us →01What is the difference between specialty coffee and ordinary coffee?
The cupping score (80 points or more, according to the SCA), traceable origin, and a roast designed to show the flavour of the bean, not to hide it.
02Why does it cost more?
There is more work at every step: selective harvesting, careful processing, small batches and a recent roast. And often a fairer price for the people who grow it.
03Do I need an expensive coffee machine to brew it at home?
No. A V60-style dripper, a scale and freshly ground coffee are enough to start. Try the calculator in our guides.
04Do you sell coffee online?
Our online shop is coming soon, with coffee whole bean or ground when you order. For businesses and larger volumes we also work with roasted coffee tailored to your needs.
05How much does advice cost?
It depends on the project. Tell us what you need and we will send you a no-obligation quote.
